The coconuts are one of the sources for the sweet pure natural taste we could get. In Thailand, there are many different areas where people grow coconut farms for fruits, coconut leaves or coconut trunks for some other purposes. The very hot day can be cured with a fresh coconut drink! Fresh tasty juice inside the fruit itself gives you a lot of energy on a hot day because it contains Sucrose, Fructose and Glucose which are good and high nutrient. Coconut meat also can be eaten as it also gives you Potassium, Zincs, Calcium, all vitamins as well as minerals which are good for your body. In the Thai desert you could see the coconut creamy milk in them to give you the unique flavor. The central part of Thailand is the place where you could see the process of making the coconut sugar. The process of making is not from the coconut fruits, but from the coconut flowers ( Ngung Ma-Proa =The bunch of young coconut flowers which have not developed into real flowers yet). By climbing on the coconut trees to the very top where the bunches are. Carrying the small bamboo buckets then cutting the very end of the bunch to let the syrup drop into the containers. Once they get enough syrup to collect. They will bring them down and boil them in the big pan to get rid of the water. Finally, the thick coconut sugar is ready to fill in the mole and let dry. This is not the only process to get the sweet concentrate of the coconut sugar, but also to preserve them for the next use. Coconut sugar is one of the sugar that is pure and not artificial or any substance that harms your body. Then we could say that coconut sugar is one of the perfect choices for cooking or for the people who’ s really concerned about health. It gains more popularity as people are more concerned about health than in the old days. Seeing the coconut sugarmaking process is something more interesting for us to learn and gain more understanding and our trust in the natural product which is produced by the true locals.
